Chef Carlos Flores, Chef de Cuisine
Chef Carlos Flores grew up in San Juan, Puerto Rico and showed an interest in arts from an early age. After discovering the culinary arts at the University of Puerto Rico, he quickly enrolled in culinary school at Escuela de Turismo de la Universidad del Este, where he graduated top of his class with a bachelor’s degree in restaurant management.
Flores trained in Puerto Rico’s top fine dining restaurants, including Delirio Restaurant by Alfredo Ayala, the father of Puerto Rican modern cuisine, and Augusto’s Restaurant by Chef Augusto Schreiner, which was named Puerto Rico’s Best Restaurant for many years. Later in his career, Flores worked at restaurants ranging from Fern by Jean George at the St. Regis Bahia Beach in Puerto Rico to the Michelin-starred Minibar by Jose Andres in Washington, D.C. He also spent time at the SLS Brickell in Miami, working as the sous chef of Bazaar Mar. Flores and later, the chef the cuisine at Fi’lia.
Flores recently joined the JW Marriott Orlando Bonnet Creek Resort & Spa team in Orlando as chef de cuisine at the resort’s steak and seafood-centric restaurant, Sear + Sea. In this role, Flores plans to turn the restaurant into the best dining experience in Orlando, bringing new recipes and experiences to diners while continuing to perfect the restaurant’s key dishes.
