When Flying Fish reopens at Disney’s Boardwalk, it will be without the services of James Beard nominee Tim Keating, who is exploring new options while remaining in Orlando. Chef Tim Majoras takes over the FF kitchen in the fall.
Tim Dacey, who opened the Capa steakhouse at the Four Seasons, is no longer in that kitchen, while Executive Sous Chef Samuel Faggetti moves to the Four Seasons on the Caribbean island of Nevis as executive chef. Chef Dominic Rice has left Slate on Sand Lake Road for an opportunity in New York. And Marc Kusche of Hamilton’s Kitchen at The Alfond Inn relocated to the Lake Nona Golf & Country Club. Hamilton’s is now under the guidance of Chef Jason Klingensmith.
In 2015, Catherine and Pierre Delrieu purchased Winter Park’s Palmano’s Trattoria and renamed it Chez Palmano’s Cafe. Now it is “Mon Petit Cheri,” serving the Delrieus’ French creations for breakfast, lunch and dinner.
Jack’s Steakhouse in Baldwin Park has transformed into Provisions & Buzz Co., with a casual “foodie-friendly menu.” Meanwhile, P&B’s opening chef, Josh Spisak, has moved to the newly renamed Jade Sushi and New Asian in College Park.
