Spring is one of Florida’s most beautiful seasons. Nature is bursting with all things new and delicate, colorful and fragrant. Local chefs are busy in their kitchens, cooking up delicious Easter brunches with all the ingredients and spirit that make this time of year memorable for our families and friends. With so many top-rated restaurants in metro Orlando, it’s a difficult task to feature a few, but below are some of our favorites, with samples of their extensive holiday menus.

The Alfond Inn at Rollins College

The beautiful boutique hotel owned by Rollins College is offering two seatings, at 10 a.m. and 1 p.m., in the Park Avenue Ballroom for its traditional Easter buffet.

Highlights: Complimentary Mimosa, Breads, Egg Dishes, Seafood, Salads. Main dishes of Roasted Prime Rib, Cherry-Glazed Ham and Salmon with Lemon Beurre Blanc. Chef’s Seasonal Desserts finish the celebration before children embark on an egg hunt with the Easter Bunny.

Special occasions are imbued with tropical flavors at Executive Chef and TV personality Richard Blais’ Four Flamingos. A Florida Easter is extra special for visitors and locals in the know, who come for the kitchen’s expansive brunch menu.

Highlights: Chimichurri-Encrusted Rack of Lamb with mint gremolata, tamarind preserves and medianoche rolls; Whole Turmeric & Ginger Marinated Fried Florida Snapper with coconut grits, cha ca and datil sauce. Small plates of Bagel and Lox, Asparagus and Crab Benedict, Steak & Eggs, Chicken and Waffle Tostada and Tomato Pie. Unlimited mimosas for $25.

Brunch at The Glass Knife is a must-do for many and on Easter Sunday, the savory dishes fly out of the kitchen. Delicious they are, but we know many come for the Instagram-worthy sweets.

TGK’s Easter delights: Blackberry Matcha Pastry ($11), Chocolate Coconut Petite Cake ($12) and Carrot Petite Cake ($12).

Highlights:  Biscuits and Gravy, TGK Eggs Benedict, Shakshuka, Strawberry Lemon Waffles, Salmon Nicoise Salad and Avocado & Egg Toast, with sides of Fresh Fruit, Crushed Potatoes, Mac & Cheese and Tomato Bisque.
