Pickling recipes from Chef Chris Brown, executive chef at the JW Marriott Orlando, Grande Lakes hotel.

Chef Brown is the force behind Whisper Creek Farm, a fruit-and-vegetable garden set on the 500-acre Grande Lakes estate, which is adjacent to the outdoor event space used for farm-to-fork dining experiences. His pickling recipes are made with vegetables grown on the farm. IPA Pickles
Yield: 4 quarts
4 pounds cucumbers
6 pack IPA beer
½ gallon champagne vinegar
4 Tablespoons mustard seeds
4 Tablespoons coriander seeds
¼ cup sugar
2 Tablespoons salt

Slice cucumbers ¼-inch thick, toss in lots of salt, wait one hour then rinse. Make brine by combining IPA beer, vinegar, mustard seeds, coriander seeds, sugar and salt in a pot and bring to a boil, then turn off heat. Strain brine and pour over pickles. Cool to room temperature. Store in cooler for two weeks before serving.

Bread/Butter Pickles
Yield: 3 quarts
4 pounds cucumbers
1 gallon apple cider vinegar
1 gallon sugar
4 Tablespoons turmeric           
2 Tablespoons mustard seeds           
2 Tablespoons coriander seeds
1 Tablespoon salt

Cut cucumbers ¼-inch thick, toss with salt, let sit for one hour, rinse off. Combine sugar, vinegar, spices and salt in a pot and bring to a boil. Pour over cucumbers. Let cool down to room temperature. Store in cooler for two weeks before serving.

Pickled Tomatoes
Yield: 20 servings
4 pints tomatoes
2 cups champagne vinegar
¼ cup granulated sugar
2¼ Tablespoons pickling spice
2 Tablespoons kosher salt

Wash tomatoes well, dry and slice in half. In a stockpot, combine vinegar and sugar and dissolve over low heat. Add pickling spice and salt to brine and stir to combine. Chill the pickling liquid. Place the tomatoes into the chilled brine. Pickling will take three to five days before tomatoes are ready to serve.
